Vegetables, pasta and bread
The cornerstone of Ethica’s cuisine is vegetables, a deep passion of our Chef Antonio Minuti.
The main supplier is Pianeta Verde, a small organic and natural operation that allows us to explore and have fun, fully exploiting the potential of the season. Wild herbs, collected on our own or with the help of forager Michele Mondello, enrich our offering.
We artisanally produce pasta and naturally leavened bread, and for the flours, we rely on the family-run company Le Antiche Tradizioni, which exclusively grinds organic ancient Sicilian grains using stone mills. We only use live and wild fish, preferring Sicilian catch, small to medium-sized, and sourced from sustainable fishing.

Fish and meat
We only use live and wild fish, preferring Sicilian catch, small to medium-sized, and sourced from sustainable fishing. We collaborate with Farau, a historic mussel farming company from Messina, which among the most representative cultivations produces the native Messina mussel, the femminella curly clam, and the imperial clam. For meats, we rely on Lombardo and Ragaglia, selecting only cuts from extensive and organic farms.
Wines
Our wine selection is dynamic and inclusive, focused on different territories. From Etna to the Aeolian Islands, with a particular emphasis on fortified wines that reflect the unique character of the “Mare Nostrum” (Mediterranean Sea). The selection is the result of meticulous research built together with sommelier Maurizio Micari. Inspired by Antonio’s concept of “cuisine without borders”, we offer our customers the freedom to customize pairings, including wines that enhance the taste concept that Ethica intends to propose.
Extra virgin olive oil
In a kitchen like Ethica’s, the extra virgin olive oil is not just a mere seasoning, but a fundamental food that demonstrates coherence and translates the imprint of transparency that distinguishes it into gustatory pleasure.
The oils we have chosen represent productive excellences (Sikulus, Sapori d’Amore, Arianna Occhipinti) of a rich, extensive, and noble territory, universal in the pursuit of the best, but close in geographical terms. Offering them for tasting is fulfilling an honorable commitment to our land.
